International dairy course

Kold College is the only dairy college in Scandinavia!

The College is located in Odense on the island of Funen (approx. 150 km from Copenhagen).

The Dairy Training Centre specialises in courses related to dairy technology, laboratory techniques, maintenance of dairy equipment, energy saving, quality control, and the running of dairy plants.

The Dairy Training Centre now provides three courses, ranging from basic to advanced dairy training.

It is entirely up to you whether you opt for all three modules or just one.

Module 1: Basic dairy technology training

16´st – 20´th of March 2020

  • The objective is to give a basic introduction to:
  • Chemistry of milk – the composition of milk
  • Milk processing according to milk products
  • Standardization and homogenizing
  • Dairy production categories (butter, cheese, powder and
  • fresh fermented products)
  • Quality control of raw milk and finished products
  • Microorganisms in milk
  • Cleaning and hygiene
  • Dairy equipment

Module 2: Dairy technology training – thematic studies 2a or 2b

23´th of March- 27´st of March 2020

Modul 2a:

Filtering, powder and recombination
Course content:

Recombination

  • Basic aspects of dairy recombination
  • Functionality of stabilisers/emulsifiers

Filtration of milk

  • Product applications
  • Different types of membranes and separation
  • processes
  • Production parameters

Manufacturing milk powder

  • Evaporation
  • Spray drying
  • Quality of powder

Module 2b:

Butter, cheese and fresh fermented products
Course content:

Starter cultures

  • Cultures for butter and cheese
  • Cultures for fermented milk products

Manufacturing butter

  • Preparation of cream for butter production
  • Temperature treatment of cream
  • Continuous production and batch production
  • Quality of butter

Manufacturing cheese

  • Treatment of cheese milk
  • Cheese process
  • Cooling, salting, storing and ripening
  • Quality of cheese

Manufacturing fresh fermented milk products

  • Different types of fermented products
  • Treatment of milk
  • Quality and fermented milk products

Module 3: Advanced dairy training – recombination of cheese

30´th March – 3´th of April 2020

  • Functionality of milk-based ingredients used for recombination of cheese
  • Functionality of stabilisers/emulsifiers used for recombination of cheese
  • Fat used for recombination of cheese
  • Part-recombination of cheese using milk and milk-based powder ingredients
  • 100% recombination of cheese using milk-based ingredients, vegetable fat and stabilisers
  • Design of production lines for recombination of cheese
  • Pilot plant trials of part-recombined cheeses
  • Mozzarella
  • Manchego
  • Cheddar
  • Cream cheese

The course at Kold College will be conducted in the English language and all materials will be in English.
Our three courses combine dairy training lessons, laboratory training, study tours and theory lessons. The educational training is based on the participants’ practical experience and skills.
Training in the dairy pilot plant at Kold College and production of cheese, yoghurt, etc., will be tailored to the wishes of the participants.
A course certificate will be issued to all participants who complete the course.

The price excludes VAT, accommodation, food and travel expenses.

You can sign up using the link on the Kold College website. Payment is due at least four weeks before the course starts. If you cancel within three weeks before the start of the course, 50% of the course fee will be refunded. If you cancel less than three weeks before the start of the course, none of the course fee will be refunded. Registration is not valid without payment of the course fee. The team will be put together depending on the participants who sign up.
